Turkey Burgers with Oat Bran

Rolled oats, flaxseed and apple make these turkey burgers one of a kind.  Have the recipe ready, as your guests are guaranteed to ask for it.

Ingredients

1.3 lb lean ground turkey, or chicken
1/2 cup  rolled oats
2 tbsp  ground flaxseed
1/2 cup  oat bran
egg
1/4 cup sliced green onion
1 tbsp Dijon mustard
apple, peeled and diced
1 tbsp freshly squeezed lemon juice
cloves garlic, minced
1/2 cup low fat salsa
1/2 tsp  red pepper flakes, optional
 freshly ground black pepper, to taste
whole grain rolls

Directions

Preheat oven to 375°F (190°C).

In a large bowl, combine ground turkey, rolled oats, flaxseed, oat bran, egg, green onions, Dijon, apple, lemon juice, garlic, salsa, pepper flakes and pepper. Combine well.

Form mixture into 8 small patties and place on a baking sheet.

Bake for 30 minutes, turning once after 20 minutes.

Serve patties on whole grain patties with fresh vegetables, such as tomato slices and shredded spinach.

Per serving (1 patty and 1 whole grain roll): 259 cal, 22 g pro, 8 g total fat (2 g saturated fat), 27 g carb, 2 g fibre, 67 mg chol, 316 mg sodium
