| 1.3 lb | lean ground turkey, or chicken |
| 1/2 cup | rolled oats |
| 2 tbsp | ground flaxseed |
| 1/2 cup | oat bran |
| 1 | egg |
| 1/4 cup | sliced green onion |
| 1 tbsp | Dijon mustard |
| 1 | apple, peeled and diced |
| 1 tbsp | freshly squeezed lemon juice |
| 3 | cloves garlic, minced |
| 1/2 cup | low fat salsa |
| 1/2 tsp | red pepper flakes, optional |
| freshly ground black pepper, to taste | |
| 8 | whole grain rolls |
Preheat oven to 375°F (190°C).
In a large bowl, combine ground turkey, rolled oats, flaxseed, oat bran, egg, green onions, Dijon, apple, lemon juice, garlic, salsa, pepper flakes and pepper. Combine well.
Form mixture into 8 small patties and place on a baking sheet.
Bake for 30 minutes, turning once after 20 minutes.
Serve patties on whole grain patties with fresh vegetables, such as tomato slices and shredded spinach.
