Strawberry and Kiwi Salad

This is a colourful salad that combines bright red strawberries with vibrant green kiwi fruit.  While we suggest finely chopping the mint and mixing it in with the fruit, you can also use whole mint leaves for a garnish.

Ingredients

2 cups strawberries, sliced
kiwi, peeled and sliced
2 tbsp fresh mint, finely chopped
Dressing: 
1 cup low fat yogurt
1 tbsp frozen orange juice concentrate
1 tsp poppy seeds

Directions

In a bowl, combine strawberries, kiwi and mint.

In a separate bowl, combine yogurt, orange juice concentrate and poppy seeds.

Drizzle dressing over strawberries - serve immediately.

Serves 4.

Per serving (salad with Poppy Seed Dressing): 95 cal, 4 g pro, 1 g total fat (0 g sat. fat), 19 g carb, 3 g fibre, 1 mg chol, 47 mg sodium
