Mixed Berry Salad with Candied Lemon Zest

The key to this dish is letting it sit for a couple of hours to allow the sweet juice from the strawberries blend flavours with the balsamic vinegar.   

Ingredients

2 cups / 500 ml mixed berries such as strawberries, raspberries, blackberries and blueberries
2 tbsp / 25 ml chopped fresh mint
Amount zest of 1 lemon
1 tbsp / 15 ml granulated sugar

Directions

In a large bowl, combine berries and mint.

To prepare candied lemon zest, combine lemon zest and sugar in a small bowl.  Set aside for 30 minutes, until zest and sugar begin to crystallize.

Just prior to serving, top fruit mixture with crystallized zest. 

Optional: Garnish with 1 square of dark bittersweet chocolate.

Serve cold.

Serves 4.

Per serving: 45 calories, 1 g protein, 0 g total fat (0 g sat. fat), 11 g carbohydrate, 2 g fibre, 0 mg cholesterol, 3 mg sodium
