Hot Apple and Cabbage Salad

This is a colourful stick-to-your ribs type of dish.  It’s low in fat and sodium too – only 1 gram of fat and 12 milligrams of sodium per serving.

Ingredients

1/2 cup  water
1/2  medium red cabbage, shredded
apples, peeled and grated
1/4 tsp  ground cloves
2 tbsp  brown sugar
1 tbsp  apple cider vinegar
1/4 cup  rolled oats

Directions

Combine all ingredients in a large saucepan and bring to a boil.

Reduce heat and simmer for 40 to 45 minutes, or until cabbage is tender.

Serve hot or cold.

Serves 6.

Per serving: 79 cal, 2 g pro, 1 g total fat (0 g sat. fat), 18 g carb, 3 g fibre, 0 mg chol, 12 mg sodium
