Add flavour without fat to meals

If your New Year's resolution includes eating healthier food and dining in instead of out, we have just the thing for you!  We have compiled some of our favourite kitchen tips to add flavour to food without adding extra fat.....

  • Spice it up.  For a low fat and simple way to spice up fish - fill a peppermill with "seafood friendly spices" - consider adding whole fennel, coriander seeds and black peppercorns.  The freshly ground spices will add flavour, without adding extra fat to fish dishes.  Try using your own favourite spice combination that can also be used on vegetables and salads.
  • Love garlic, but hate the odour that it leaves on your hands and breath?  Don't despair - for that stubborn smell that is left on your hands after peeling and chopping garlic bulbs, rub your hands on a stainless steel faucet as the water is running - this will greatly reduce the smell on your hands.  While time is the only real remedy for garlic breath, consider chewing on fresh parsley sprigs or fennel seeds - this will help reduce the odour and freshen your breath.
  •  To get the most flavour from your spices, consider buying whole spices instead of ground.  Whole spices maintain their flavour for longer periods of time (2 years, opposed to 6 months).  Grind whole spices in a coffee grinder prior to cooking to get the freshest possible flavour.  Freshly ground spices will have a more pungent flavour than those that have been sitting in your spice rack.  To clean the coffee grinder (and avoid coriander flavoured coffee!), grind a fresh piece of bread to clean it out - this will pick up all bits of spices left in the grinder.
